Massaman Curry Paste
Massaman Curry, known as Kaeng Matsaman in Thai, is a southern Thai culinary gem that bears a significant influence from Indian cuisine. The term "Matsaman" refers to an older way of saying "Muslim," as many of the aromatic dry spices integral to this curry were introduced to Thailand by early Muslim traders. Reflecting its Muslim heritage and adherence to Islamic dietary guidelines, this curry primarily features chicken as its protein base. However, inventive variations of this dish also include duck, beef, mutton, goat, and, less commonly, pork. Resonating with the aromatic complexity of Indian curries, Massaman Curry boasts a rich tapestry of dry spices that tantalize the senses. This delicious creation is typically served with rice or roti, providing a harmonious and satisfying meal.
